Taco Party

Plan a Taco Party for your favorite sporting event, birthday bash or neighborhood get together.  They can be healthy and delicious, and let’s face it…who doesn’t like a good taco?

  1. Choose healthy protein sources like lean Chicken, Beef, Shrimp or Fish.
  2. For vegetarians opt for brown rice, quinoa or black bean fillings.
  3. Reduce or eliminate dairy and opt for lots of healthy, fresh and tasty condiments like salsas and Mexican slaw.

Get a jump on the party by shopping early and prepping all the condiments and marinades.  When everything is ready, just set up your Taco Bar and let everyone help themselves – Ole.

Chicken Marinade and Method

Ingredients for Marinade

• 1/4 cup olive oil
• 1/4 cup lime juice
• 2 TB honey
• 4 garlic cloves, smashed
• 1 tsp each of cumin, chili powder and oregano
Method
• Mix ingredients together, pour over boneless chicken breast (or other preferred chicken pieces) and marinate for several hours or overnight.
• Roast or grill chicken until cooked through, thinly slice after cooling 10-15 minutes.

Beef Marinade and Method

Ingredient for Marinade
• 2 TB olive oil
• 2 TB red wine or balsamic vinegar
• 1 TB honey
• 1 Pepper in Adobo Sauce (with some of the sauce. Note: these are hot, use more or less depending on personal heat preference.)
• 1/2 tsp each of cumin and oregano
• 3-4 fresh garlic cloves, minced
• 3-4 scallions, sliced
Place all ingredients in blender and process until smooth. Marinate beef overnight or for several hours before grilling or roasting.
Beef
• Use flank, skirt, hanger or other cut of beef.
• Marinade any cut for several hours and then grill or roast to desired doneness.
• Let beef rest before slicing against the grain and serving with salad.

Shrimp for Tacos

Ingredients for Marinade
• 2 TB olive oil
• 1 TB lime juice + Zest of 1 lime
• 2-3 garlic cloves & 1/2-1 jalapeño, minced together
• 1/2 tsp each of cumin, dried oregano and paprika
• Additional lime for juice at end of cooking
Method
• Mix together all but 1 lime and pour over peeled and deveined shrimp to marinate.
• Heat saute pan to high heat, add shrimp in single layer and cook 2-3 minutes, turning at least one time, until shrimp are cooked through. Remove from heat, squeeze lime juice over the shrimp, season with salt & pepper and serve.
