Soba Noodles are made from buckwheat flour and are traditionally used in Japanese cuisine (the Japanese word for buckwheat is soba!) Buckwheat is actually a fruit seed (not a cereal grain) and is high in phytonutrients and contains 8 amino acids – it’s good for you. Like other whole grains, it helps control cholesterol and blood sugar levels and buckwheat scores high on its ability to satisfy hunger.
Soba noodles are versatile and tasty. They are also lower in calories than wheat grain noodles and they cook quickly.
100% buckwheat noodles do not contain gluten so they can be incorporated into wheat-free diets. However, be careful to check the labels because may soba products are made in plants where wheat grain is also processed and so you may get some wheat in those products – make sure you look for 100% buckwheat!
