Did you know that the Center for Science in the Public Interest (CSPI) ranked the sweet potato number one (#1) in nutrition – for all vegetables!!! A partial list of nutrients includes Vitamins A, B6, C and E, thiamine, protein and calcium.
In addition to providing all that nutrition in one little package, cravings for sweets can be reduced by adding sweet vegetables (like these potatoes or yams) to your diet. Unlike refined sugars, sweet vegetables elevate blood sugar levels gradually, so you don’t suffer the inevitable energy crash that comes with things like cake, cookies or soda.
