Chinese Dried Mushrooms
You can purchase Chinese dried mushrooms at many grocery stores, specialty food store, online at Kalustyan’s and many other outlets. Rehydrate them by bringing water to a boil (enough water to allow all mushrooms to be submerged), let them simmer for a couple of minutes, take off heat and allow them to steep for a few minutes. Drain and cool enough to handle. Slice and prepare as you wish.
Dried mushrooms have a meaty texture and earthy flavor when rehydrated and cooked, are relatively inexpensive and handy to have when you run out of fresh ones. If you like mushrooms and you haven’t tried them yet, check it out.
