Robert Surles (also known as Chef Bobo) is the Executive Chef for the Calhoun School, located on the Upper West side of NYC. I heard him when he spoke at the Institute for Integrative Nutrition where I studied dietary theory. I was so impressed with his energy and knowledge. He certainly has a passion for food and nutrition and is so excited teaching young people about new and healthier foods. His strategies and “school lunch menus” are pretty much opposite what we have come to expect.
How nice it would be if every student in our school system could be exposed to this kind of enthusiasm about food and nutrition – it could possibly change the health outlook for so many! If you are interested in Chef Bobo’s recipes and/or ideas, read his blog.
