A Healthy, Easy & Delicious Dinner
We had a nice meal last nite (actually we have a variation of this meal often because we both like it, it’s easy, quick and healthy. The menu is here, recipes posted separately.
- Brown Rice Penne with sundried tomato pesto and a little grated parmesan reggiano
- Roasted vegetables including broccoli, mushrooms & onion
- Salad of romaine & arugula, peppers & croutons with white wine vinaigrette
And Dick had some freshly baked oatmeal cookies, per usual.
p.s. this was extra quick because I had sundried tomato pesto on hand – made on Sunday.
